Warm Tofu Vegetable Salad

Stir-fried tofu, broccoli, onion, cabbage, carrot, and celery in chili garlic sauce over salad greens.

Often, the chili garlic sauce clashes with some ingredients in a veggie meal, but here it is allowed to be “the star of the show”, paired with lighter, creamier flavors of the tofu.
In previous chili garlic dishes, the sauce tended to gather in the broccoli and become overpowering. My serving today deftly skirted this issue by using child-sized broccoli.
In a sea of monotonous leaves, veggies, and chili garlic sauce, there are two diamond-in-the-rough tofu chunks. These are the golden nuggets in the mine that is the Warm Tofu Vegetable Salad.

One of the ugliest dishes to date, the dish has spinach with the consistency of leaves on the ground on a cool, dry, autumn’s day.
Extreme crunch lovers will be disappointed, but if you have a tongue that appreciates the softer textures, you will notice a fun range from fluffy-as-a-marshmallow tofu, to firm, snappy lettuce, and crackly, brittle spinach.

Uno:Enchilada with Red Sauce – a Mardi Gras dish
Mardi Gras is historically about “going big” when it comes to cuisine. So why is today’s enchilada one-third the size of previous veggie enchiladas? Although the dish has have a bit of a kick, with a bit of a crunch, it all comes too little too late. We would NOT give this dish any beads. It was a safe meal with not many downsides, but with not many upsides either. BORING.

Dos: Vegetable Enchilada
Corn tortilla filled with fresh vegetables and boiled in red enchilada sauce topped with cheese.

Andrew: This meal is intense. The first bite – like a spicy Latin lover – leaves a kick in your mouth that just won’t quit! The fiesta keeps on rocking right through the last nibble.
My partner, sexy Taylor chose to review this dish by eating i all in one bite.

Taylor: DO NOT EAT IN ONE BITE!!! CAUSES INTENSE TINGLES IN THE MOUTH.

Unlike the boring red sauce, this yellow sauce (although labeled as red) offers intense vivacity with every chew.

The winner: DOS. The uno was just too safe. Sure, nobody hates it, but nobody remembers it either. Bottom line: With veggie meals you go big or go home every day of the week.
